Ingredients

20 large pasta shells

2 cups ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup fresh spinach, chopped (or 1/2 cup frozen, thawed and drained)

1 large egg

2 teaspoons Italian seasoning

1 teaspoon garlic powder

Salt and pepper, to taste

3 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta: In a large pot of salted boiling water, cook the pasta shells according to package instructions until al dente. Drain and let cool slightly.

Prepare the Filling: In a large bowl, combine the ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, chopped spinach, egg, Italian seasoning, garlic powder, salt, and pepper. Mix until well combined and creamy.

Stuff the Shells: Take each pasta shell and fill it generously with the ricotta mixture. Place the filled shells seam-side up in a large baking dish.

Add Marinara Sauce: Pour the marinara sauce evenly over the stuffed shells, making sure to cover them thoroughly. Sprinkle the remaining 1/2 cup of mozzarella cheese on top.

Bake: Cover the baking dish with aluminum foil (to prevent burning) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serve: Let the dish cool for a few minutes prior to serving. Garnish with fresh basil leaves and additional Parmesan cheese, if desired.

Enjoy: Serve warm and enjoy the cheesy, comforting flavors of these ricotta stuffed shells!
