2 lbs ground beef or turkey

1 large onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 cans (14 oz each) diced tomatoes (with juices)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (6 oz) tomato paste

2 tbsp chili powder

1 tbsp cumin

1 tsp smoked paprika

1 tsp oregano

1 tsp salt (to taste)

½ tsp black pepper (to taste)

1 cup beef or vegetable broth

2 tbsp olive oil

Optional toppings: shredded cheese, sour cream, chopped green onions, fresh cilantro, jalapeños

Instructions
 

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened (about 5 minutes). Add the minced garlic and cook for another minute, until fragrant.

    Brown the Meat: Push the vegetables to the side of the pot and add the ground beef or turkey. Break it up with a spoon and cook until browned and cooked through (approximately 5-7 minutes). Drain excess fat if necessary.

      Add the Spices: Sprinkle in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Stir well to combine the spices with the meat and vegetables, allowing to cook for another minute for the spices to activate.

        Combine the Ingredients: Pour in the diced tomatoes (including juices), tomato paste, kidney beans, black beans, and broth. Stir everything together until well mixed.

          Simmer: Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for at least 30 minutes, stirring occasionally. For a deeper flavor, simmer for up to 1 hour.

            Taste and Adjust: Before serving, taste the chili and adjust seasoning if needed. You can add more chili powder for heat, salt for flavor, or additional broth if you prefer a thinner consistency.

              Serve: Ladle the chili into bowls and top with your choice of shredded cheese, sour cream, chopped green onions, fresh cilantro, or jalapeños. Serve with crusty bread or over rice for a complete meal.
