2 ½ cups all-purpose flour

1 teaspoon salt

1 tablespoon granulated sugar

1 cup unsalted butter, chilled and diced

6 to 8 tablespoons ice water

For the Apple Filling:

6 to 8 medium-sized apples (such as Granny Smith or Honeycrisp), peeled, cored, and sliced

¾ cup granulated sugar

¼ cup packed brown sugar

2 tablespoons all-purpose flour

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1 tablespoon lemon juice

1 tablespoon unsalted butter, cut into small pieces

1 egg (for egg wash)

1 tablespoon milk (for egg wash)

Instructions
 

Make the Pie Crust:

    - In a large bowl, combine flour, salt, and sugar. Add the chilled, diced butter and mix using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

      - Stir in the ice water one tablespoon at a time until the mixture forms a dough. Do not overmix.

        - Divide the dough into two balls, flatten them into discs, wrap in plastic, and refrigerate for at least 1 hour.

          Prepare the Apple Filling:

            - In a large bowl, toss the sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Let sit for about 15 minutes to allow the juices to meld.

              Assemble the Pie:

                - Preheat your oven to 425°F (220°C).

                  - Roll out one disc of dough on a floured surface to fit a 9-inch pie pan. Gently place it into the pan, pressing it against the sides.

                    - Fill the pie crust with the apple mixture, ensuring it's evenly distributed. Dot the filling with small pieces of butter.
