1 lb boneless, skinless chicken breasts, diced

4 tablespoons unsalted butter, divided

1 medium onion, finely chopped

4 cloves garlic, minced

1 bell pepper (red or green), diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

½ teaspoon black pepper

1 cup heavy cream

1 cup chicken broth

1 cup frozen peas (optional)

2 cups cooked rice or quinoa (for serving)

Fresh cilantro or parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Chicken: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once melted, add the diced chicken breast. Season with salt and pepper and sauté until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    Sauté the Aromatics: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the chopped onion and diced bell pepper. Sauté for 3-4 minutes until the onion becomes translucent, then add the minced garlic and cook for another 1-2 minutes until fragrant.
