Tender Maple Dijon Pork Bites

1 lb pork tenderloin, cut into bite-sized cubes

1/4 cup Dijon mustard

1/4 cup pure maple syrup

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)

Salt and pepper, to taste

1/4 teaspoon cayenne pepper (optional, for heat)

Sesame seeds and chopped chives for garnish

Marinade Preparation: In a medium bowl, whisk together the Dijon mustard, maple syrup, olive oil, minced garlic, rosemary, thyme, salt, pepper, and cayenne pepper (if using). This will create a sweet and tangy marinade.

    Marinate the Pork: Add the pork cubes to the bowl and toss well to ensure each piece is coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, but ideally for 2 hours to allow the flavors to develop.

      Preheat the Pan: Heat a large skillet over medium-high heat. Add a drizzle of olive oil to coat the bottom of the pan.

        Sear the Pork: Once hot, add the marinated pork bites to the skillet in a single layer, making sure not to overcrowd the pan. Sear for 3-4 minutes on one side without moving them, then flip and sear the other side for another 3-4 minutes, or until they are browned and cooked through.

          Glaze the Bites: Once the pork is nearly cooked, reduce the heat to low and pour any remaining marinade over the pork. Toss gently to coat the pork bites and let simmer for an additional 2 minutes, allowing the glaze to thicken slightly.
