Ingredients

4 cod fillets (6 oz each)

1 cup coconut milk (full-fat for creaminess)

2 tablespoons unsalted butter

2 tablespoons lemon juice (freshly squeezed)

1 teaspoon lemon zest

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon honey (optional, for sweetness)

Salt and pepper to taste

1 teaspoon red pepper flakes (optional, for heat)

Fresh parsley or cilantro for garnish

Cooked jasmine rice or quinoa, for serving

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Baking Dish: Lightly grease a 9x13 inch baking dish with a bit of butter or cooking spray.

Make the Coconut Lemon Cream Sauce: In a medium saucepan over medium heat, melt the butter. Add the minced garlic and grated ginger, sautéing for about 1-2 minutes until fragrant.

Combine Ingredients: Pour in the coconut milk, lemon juice, and lemon zest. Stir well to combine and let the mixture simmer for about 3-4 minutes. If desired, add honey for a touch of sweetness and season with red pepper flakes, salt, and pepper. Allow to simmer until slightly thickened.

Arrange Cod Fillets: Place the cod fillets in the prepared baking dish, ensuring they are spaced evenly. Pour the coconut lemon cream sauce over the fillets, making sure they are well-covered.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork. Remove the foil in the last 5 minutes of baking for a slightly golden top.

Garnish and Serve: Once done, remove the cod from the oven and let it sit for a couple of minutes. Garnish with freshly chopped parsley or cilantro. Serve the cod over jasmine rice or quinoa, spooning extra sauce over the top.

Enjoy: Taste and adjust the seasoning if necessary, then dig in and savor the delightful flavors!
