Ingredients

1 (8 oz) package cream cheese, softened

1 cup powdered sugar

1/4 cup lemon juice (freshly squeezed for best flavor)

1 tsp lemon zest

1 (15 oz) can lemon pie filling

1 box vanilla cake mix (15.25 oz)

1/2 cup unsalted butter, melted

1 cup cold water

1/2 cup sliced almonds (optional, for topping)

Powdered sugar, for dusting (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.

Prepare the Cream Cheese Mixture: In a medium bowl, mix the softened cream cheese and powdered sugar with an electric mixer until smooth and creamy. Blend in the lemon juice and lemon zest until all ingredients are well combined.

Layer the Ingredients: Spread the lemon pie filling evenly across the bottom of the prepared baking dish. Spoon the cream cheese mixture on top of the pie filling, and gently spread it out with a spatula.

Add the Cake Mix: Evenly sprinkle the dry vanilla cake mix over the cream cheese layer. Do not stir; it’s important to leave it layered.

Combine the Butter and Water: In a small bowl, mix the melted butter with the cold water, then pour this mixture evenly over the cake mix. If desired, sprinkle sliced almonds over the top for added crunch and flavor.

Bake the Cake: Bake in the preheated oven for about 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the cake to cool for at least 15 minutes before serving. For an extra touch, dust with powdered sugar just before serving.

Enjoy: Slice into squares and serve warm or at room temperature. This cake pairs well with whipped cream or ice cream on the side!
