4 medium sweet potatoes

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 packet taco seasoning (or homemade mix)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheddar cheese (or dairy-free alternative)

1 avocado, sliced

1/2 cup sour cream or Greek yogurt (or dairy-free option)

Fresh cilantro, chopped (for garnish)

Salt and pepper, to taste

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Wash the sweet potatoes thoroughly, then pierce each one several times with a fork. Rub them with a little olive oil and sprinkle with salt. Place them on a baking sheet lined with parchment paper.

      Bake Sweet Potatoes: Bake the sweet potatoes in the preheated oven for about 45 minutes, or until tender when poked with a fork.

        Cook Taco Filling: While the sweet potatoes are baking, heat a skillet over medium heat. Add the ground turkey or beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.

          Add Remaining Ingredients: Stir in the taco seasoning, black beans, corn, and diced tomatoes. Cook for an additional 5 minutes until heated through. Season with salt and pepper to taste.
