Ingredients
  

1 lb ground beef (or turkey for a lighter option)

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (28 oz) diced tomatoes with green chilies

1 packet taco seasoning (or homemade)

4 cups beef or vegetable broth

1 cup water

Salt and pepper to taste

1 tsp cumin

1 tsp chili powder

1 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Shredded cheese (cheddar or Mexican blend, optional)

Sour cream (optional, for serving)

Tortilla chips (for serving)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and diced bell pepper, sautéing for about 5 minutes until they soften.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the ground beef to the pot, breaking it up with a spoon. Cook until browned and no longer pink, about 7-10 minutes. Drain excess grease if necessary.

        Pour in the diced tomatoes with green chilies, black beans, kidney beans, and corn. Stir everything together.

          Sprinkle the taco seasoning, cumin, and chili powder over the mixture. Pour in the broth and water. Stir well to combine, and season with salt and pepper to taste.

            Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for about 20-30 minutes to allow the flavors to meld. Stir occasionally.

              Taste and adjust seasoning if necessary. If you want more spice, add fresh or pickled jalapeños.

                Serve the soup warm, garnished with fresh cilantro, shredded cheese, a dollop of sour cream, and crunchy tortilla chips on the side.
