1 can (15 oz) black beans, drained and rinsed

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or homemade: 2 tsp chili powder, 1 tsp cumin, 1 tsp paprika, ½ tsp oregano, ¼ tsp cayenne)

1 cup water

1 cup corn (fresh, frozen, or canned)

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheddar cheese

8 small tortillas (corn or flour)

Sour cream, for serving

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Sauté the Aromatics: In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

    Cook the Beef: Add the ground beef to the skillet. Break it up with a spatula and cook until browned, about 5-7 minutes. Season with salt and pepper to taste.

      Add Beans and Seasoning: Stir in the black beans, taco seasoning, and water. Mix well, ensuring the beef is evenly coated in the seasoning. Bring to a simmer, then reduce the heat and let it cook for about 5-10 minutes, allowing the flavors to meld.

        Incorporate Corn: Add the corn to the beef and bean mixture and stir to combine. Allow to cook for an additional 3 minutes until the corn is heated through.

          Prepare the Tortillas: While the beef and bean mixture is simmering, warm the tortillas. You can do this by placing them in a dry skillet over medium heat for about 30 seconds on each side or wrapping them in foil and heating in the oven.

            Assemble the Tacos: To assemble, place a generous scoop of the beef and bean mixture onto a warm tortilla. Top with shredded lettuce, diced tomatoes, and shredded cheese.
