1 ½ cups powdered sugar

1 cup almond flour

2 large egg whites (at room temperature)

1 cup powdered sugar (for buttercream)

2 tablespoons heavy cream

1 teaspoon vanilla extract (for buttercream)

¼ cup strawberry jam (for filling)

Instructions
 

Prepare the Oven and Baking Sheets:

    Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper. You may use a silicone mat for added convenience.

      Make the Macaron Batter:

        In a bowl, sift together the powdered sugar and almond flour to remove any lumps. Set aside. In a separate bowl, beat the egg whites with an electric mixer on medium speed until frothy. Add the cream of tartar and continue whisking until soft peaks form. Gradually add the granulated sugar, 1 tablespoon at a time, while increasing the speed to high. Beat until the mixture is glossy and stiff peaks form.

          Add Flavor and Color:

            Gently fold in the vanilla extract and a few drops of pink food coloring into the meringue until well combined. Be careful not to overmix. Next, add the sifted almond flour mixture in three parts, folding gently after each addition until the batter flows like lava and can form a figure-eight shape on itself.

              Pipe the Macarons:

                Transfer the macaron batter into a piping bag fitted with a round tip (about ½ inch in diameter). Pipe small circles (about 1 inch in diameter) onto the prepared baking sheets, leaving space between each. Tap the baking sheets gently on the counter to release any air bubbles.

                              Assemble the Macarons:

                                Pair similar-sized macaron shells. Spread a thin layer of strawberry jam on one shell and pipe a dollop of buttercream on top. Sandwich the two shells together gently.

                                  Final Touch:

                                    Let the assembled macarons rest in the refrigerator for 24 hours to allow the flavors to meld. Bring to room temperature before serving.
