For the Pulled Pork:

4-5 lbs pork shoulder (also known as pork butt)

2 tablespoons olive oil

1 tablespoon smoked paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon brown sugar

1 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon salt

1 teaspoon black pepper

1 cup chicken broth

For the BBQ Sauce:

1 cup ketchup

1/2 cup apple cider vinegar

1/2 cup brown sugar

1/4 cup honey

2 tablespoons Worcestershire sauce

1 teaspoon mustard powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper

Salt and pepper to taste

For Serving:

Burger buns or slider rolls

Coleslaw (optional)

Pickles (optional)

Prepare the Pork: In a small bowl, mix the smoked paprika, garlic powder, onion powder, brown sugar, cayenne pepper, salt, and black pepper. Rub this spice mixture all over the pork shoulder. Let it marinate for at least 1 hour, or overnight in the refrigerator for best results.

    Sear the Pork (Optional): Heat olive oil in a large skillet over medium-high heat. Sear the pork on all sides until browned (about 4-5 minutes per side). This step adds depth of flavor but can be skipped if you're short on time.

      Slow Cook the Pork: Transfer the seared pork into a slow cooker. Pour chicken broth around the pork. Cover and cook on low for 8-10 hours or high for 4-6 hours until the pork is tender and easily shreds with a fork.

        Make the BBQ Sauce: In a medium saucepan, combine ketchup, apple cider vinegar, brown sugar, honey, Worcestershire sauce, mustard powder, smoked paprika, and cayenne pepper. Stir well and bring to a simmer over medium heat. Reduce to low and let it cook for 15-20 minutes, stirring occasionally, until thickened. Adjust seasoning with salt and pepper as needed.

          Shred the Pork: Once the pork is done cooking, remove it from the slow cooker and place it on a cutting board. Let it rest for a few minutes, then use two forks to shred the meat into bite-sized pieces.

            Combine Pork and Sauce: Return the shredded pork to the slow cooker, and pour the sweet & tangy BBQ sauce over the top. Gently mix to combine until all the meat is coated with the sauce. Let it warm on low for another 30 minutes to meld the flavors together.

              Serve: Pile the sweet and tangy pulled pork onto burger buns or slider rolls. Top with coleslaw and pickles if desired. Enjoy!
