2 cans young green jackfruit in brine or water (20 oz each), drained and rinsed

1 tablespoon olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon onion powder

1/2 teaspoon chili powder (adjust to taste)

Salt and pepper, to taste

1 cup BBQ sauce (store-bought or homemade)

2 tablespoons maple syrup (optional for extra sweetness)

1 tablespoon apple cider vinegar

1 tablespoon soy sauce (or tamari for gluten-free)

1 teaspoon liquid smoke (optional for extra smokiness)

Fresh cilantro or parsley, for garnish

Vegan buns, for serving

Pickles, for garnish (optional)

Instructions
 

Prepare the Jackfruit: Drain and rinse the jackfruit. Using your hands or two forks, shred the jackfruit into pieces, mimicking the texture of pulled pork. Remove any seeds and tough cores.

    Sauté Veggies: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until translucent. Add garlic and cook for another 30 seconds until fragrant.

      Season the Jackfruit: Stir in the shredded jackfruit, smoked paprika, cumin, onion powder, chili powder, salt, and pepper. Cook for about 5 minutes, stirring occasionally, allowing the jackfruit to absorb the flavors.

        Add BBQ Sauce: Reduce the heat to low and add the BBQ sauce, maple syrup, apple cider vinegar, soy sauce, and liquid smoke (if using). Mix well until the jackfruit is fully coated. Let it simmer for 15-20 minutes, stirring occasionally, until heated through and thickened.
