Ingredients

1 pound thick-cut bacon

1/2 cup brown sugar, packed

1 tablespoon cayenne pepper (adjust for heat preference)

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon sea salt

2 tablespoons maple syrup (for extra flavor)

1 teaspoon vanilla extract

Optional: 1 tablespoon of crushed red pepper flakes for extra kick

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a large baking sheet with aluminum foil for easy cleanup and place a wire rack on top.

Prepare the Bacon: Arrange the bacon slices in a single layer on the wire rack. Make sure they’re not overlapping for even cooking.

Mix the Coating: In a mixing bowl, combine the brown sugar, cayenne pepper, smoked paprika, black pepper, sea salt, maple syrup, and vanilla extract. Stir until it's a thick, paste-like consistency.

Coat the Bacon: Generously brush the mixture over each slice of bacon, making sure to cover them well for a delicious glaze. Reserve any remaining coating for a second application later.

Bake the Bacon: Place the baking sheet in the oven and bake for about 20 minutes. After 20 minutes, carefully flip the bacon slices and brush on any remaining coating. Bake for an additional 10-15 minutes, or until the bacon is crispy and caramelized.

Cool and Serve: Once done, remove the bacon from the oven and let it cool on the rack for about 5 minutes. This will allow the glaze to harden slightly. Serve on a platter, or store in an airtight container for later snacking.
