2 medium-sized sweet potatoes (about 1 lb), baked and peeled

1/2 cup brown sugar

1/4 cup granulated sugar

1/2 cup milk (or coconut milk for a dairy-free option)

1/2 cup heavy cream

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1 tablespoon butter, melted (or coconut oil for dairy-free)

1 pre-made pie crust (store-bought or homemade)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, mash the baked sweet potatoes until smooth and creamy.

      Add the brown sugar, granulated sugar, milk, heavy cream, eggs, vanilla extract, ground cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix until all ingredients are well combined and the mixture is free from lumps.

        Pour the sweet potato mixture into the prepared pie crust, smoothing the top with a spatula.

          Drizzle the melted butter (or coconut oil) over the top of the filling for added richness.

            Bake in the preheated oven for 45-50 minutes, or until the pie is set and a toothpick inserted in the center comes out clean.

              Allow the pie to cool at room temperature for about 1 hour before serving. This will help it firm up a bit more.

                Serve warm or chilled, optionally topped with whipped cream or a scoop of vanilla ice cream.
