2 medium sweet potatoes, peeled and diced

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheddar cheese (or a dairy-free alternative)

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon olive oil

Salt and pepper, to taste

1 avocado, sliced (for topping)

Fresh cilantro, chopped (for garnish)

1 jalapeño, sliced (optional, for heat)

Lime wedges (for serving)

Instructions
 

Preheat Your Oven: Preheat your oven to 400°F (200°C) to prepare for the final baking step of the nacho skillet.

    Sauté the Sweet Potatoes: In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and season with salt, pepper, smoked paprika, cumin, garlic powder, and onion powder. Stir to coat the sweet potatoes in the spices. Cook for about 10-12 minutes, stirring occasionally, until they are tender and slightly caramelized.

      Mix in the Ingredients: Once the sweet potatoes are softened, add the black beans, corn, and diced tomatoes to the skillet. Stir all the ingredients together and cook for an additional 5 minutes to heat through.
