Ingredients

For the Sweet Potato Mixture:

4 large sweet potatoes (about 2 pounds), peeled and cubed

1/2 cup brown sugar

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

1/2 cup milk (or half-and-half for creaminess)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

2 large eggs, beaten

For the Pecan Topping:

1 cup pecans, chopped

1/2 cup brown sugar

1/4 cup all-purpose flour

1/4 cup unsalted butter, melted

1 teaspoon ground cinnamon

A pinch of salt

Instructions

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or butter.

Prepare the Sweet Potatoes: In a large pot, boil the cubed sweet potatoes in salted water until they are fork-tender, about 15-20 minutes. Drain and return to the pot.

Mash the Sweet Potatoes: Add the brown sugar, granulated sugar, melted butter, milk, vanilla extract, cinnamon, nutmeg, and salt to the sweet potatoes. Mash until smooth and well combined.

Add Eggs: Stir in the beaten eggs until fully incorporated, ensuring not to over-mix.

Transfer to Baking Dish: Pour the sweet potato mixture into the prepared baking dish and spread it evenly.

Prepare the Pecan Topping: In a medium bowl, combine the chopped pecans, brown sugar, flour, melted butter, cinnamon, and a pinch of salt. Mix until the pecans are evenly coated with the sugary mixture.

Top and Bake: Sprinkle the pecan topping evenly over the sweet potato mixture. Bake in the preheated oven for about 25-30 minutes, or until the topping is golden brown and the casserole is heated through.

Serve: Allow the casserole to cool slightly before serving. It pairs beautifully with roasted meats or can be enjoyed as a sweet side dish for any gathering.
