Sweet Potato Black Bean Chili – Hearty & Healthy!

2 medium sweet potatoes, diced

1 can (15 oz) black beans, drained and rinsed

1 can (14 oz) diced tomatoes with green chilies

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (red or green), chopped

1 cup vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon cayenne pepper (optional, for heat)

2 tablespoons olive oil

Salt and pepper to taste

1 cup corn kernels (fresh, frozen, or canned)

1 tablespoon lime juice

Fresh cilantro or green onions for garnish (optional)

Avocado slices for serving (optional)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 5-7 minutes, until the onion is translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Add Sweet Potatoes: Add the diced sweet potatoes to the pot and stir well to combine with the aromatics. Cook for about 5 minutes, allowing them to soften slightly.

      Incorporate Spices: Sprinkle in the ground cumin, smoked paprika, chili powder, cayenne pepper (if using), and season with salt and pepper. Stir until the vegetables are coated with the spices.

        Combine Remaining Ingredients: Pour in the vegetable broth, diced tomatoes with their juices, and the black beans. Stir to combine, making sure to scrape up any bits from the bottom of the pot.

          Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let the chili simmer for about 25-30 minutes, or until the sweet potatoes are tender.

            Add Corn & Lime: After the sweet potatoes are cooked through, stir in the corn and lime juice. Allow to cook for another 5-10 minutes. Taste and adjust seasoning, adding more salt, pepper, or lime juice if desired.
