Sweet Corn & Zucchini Pizza

1 pre-made pizza dough (store-bought or homemade)

1 cup sweet corn kernels (fresh, frozen, or canned)

1 medium zucchini, thinly sliced

1 cup shredded mozzarella cheese

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for spice)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Preheat the Oven: Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up as well.

    Prepare the Dough: If using refrigerated or frozen dough, allow it to sit at room temperature for about 30 minutes. Roll out the dough on a lightly floured surface to your desired thickness (about 12 inches in diameter).

      Sauté the Vegetables: In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the zucchini slices and sweet corn, seasoning with salt, pepper, oregano, and red pepper flakes if using. Cook for about 5 minutes until the vegetables soften slightly. Remove from heat.

        Assemble the Pizza: Spread the ricotta cheese evenly over the rolled-out pizza dough. Sprinkle the shredded mozzarella cheese on top, followed by the sautéed zucchini and corn mixture. Finish with a sprinkle of grated Parmesan cheese for added flavor.
