2 cups fresh sweet corn kernels (about 4 ears of corn)

2 ripe tomatoes, diced

1 small red onion, finely chopped

1 avocado, diced

1 cup black beans, rinsed and drained

1 teaspoon ground cumin

1 teaspoon chili powder

1 tablespoon olive oil

Juice of 1 lime

Salt and pepper to taste

8 small corn or flour tortillas

Fresh cilantro, for garnish

Crumbled feta or cotija cheese (optional)

Instructions
 

Prep the Corn: If using fresh corn, cut the kernels off the cob and set aside. If using frozen corn, thaw it and drain well.

    Cook the Corn: In a skillet over medium heat, add olive oil. Once hot, stir in the sweet corn. Cook for about 4-5 minutes until slightly caramelized. Season with salt, pepper, cumin, and chili powder, mixing well to combine. Remove from heat.

      Combine Ingredients: In a mixing bowl, combine the sautéed corn, diced tomatoes, red onion, black beans, and lime juice. Gently toss to mix everything together.

        Prepare the Tortillas: Warm the corn or flour tortillas in a dry skillet over low heat for about 30 seconds on each side until they are pliable.
