2 ripe avocados

1 cup sweet corn kernels (fresh or frozen)

1 medium lime (juiced)

2 tablespoons olive oil

1 teaspoon chili powder

Salt and black pepper, to taste

4 slices of whole grain bread

2 tablespoons fresh cilantro, chopped (optional)

Red pepper flakes (optional, for garnish)

Prepare the Corn: If using fresh corn, boil the cob in salted water for about 3-5 minutes until tender. Let cool, then cut off the kernels. If using frozen corn, simply thaw and drain.
