Sweet Corn & Avocado Salad

Ingredients
  

2 cups fresh sweet corn kernels (or 1 can, drained)

1 ripe avocado, diced

1 red bell pepper, diced

½ red onion, finely chopped

1 cup cherry tomatoes, halved

¼ cup fresh cilantro, chopped

2 tablespoons extra virgin olive oil

1 tablespoon fresh lime juice

1 teaspoon honey (or agave syrup for a vegan option)

Salt and pepper to taste

Optional: 1 jalapeño, finely chopped for a spicy kick

Instructions
 

Prepare the Corn: If using fresh corn, bring a pot of water to boil. Add the corn kernels and cook for 3-4 minutes until tender. Drain and set aside to cool. If using canned corn, simply drain and rinse it before adding.

    Chop the Vegetables: In a large mixing bowl, add the diced avocado, red bell pepper, red onion, cherry tomatoes, and if desired, jalapeño.

      Add the Corn: Once the corn is cool, gently fold it into the bowl with the vegetables.

        Make the Dressing: In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper until well combined.

          Combine Everything: Pour the dressing over the salad ingredients and toss gently to ensure everything is evenly coated. Be careful not to mush the avocado.

            Garnish: Sprinkle the chopped cilantro on top for freshness and additional flavor.
