Sweet Chili Tofu Stir-Fry

400g firm tofu, pressed and cubed

2 tablespoons cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium zucchini, sliced

1 cup broccoli florets

3 green onions, chopped (reserve some for garnish)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

Optional: sesame seeds for garnish

Prepare the Tofu: Begin by pressing the tofu to remove excess moisture. Wrap it in a clean kitchen towel and place something heavy on top for about 15-20 minutes. Once pressed, cut the tofu into bite-sized cubes.

    Coat the Tofu: In a mixing bowl, toss the cubed tofu with cornstarch until evenly coated. This will create a nice crispy texture when cooked.

      Cook the Tofu: In a large non-stick skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the tofu in a single layer (you may need to do this in batches) and cook for about 4-5 minutes on each side, or until golden brown and crispy. Remove the tofu from the pan and set aside.

        Sauté the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the bell peppers, zucchini, and broccoli. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.

          Add Aromatics: Stir in the minced garlic and ginger to the vegetables and sauté for another minute until fragrant.

            Combine Tofu and Sauce: Return the crispy tofu to the skillet. In a small bowl, mix the sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Pour the sauce over the tofu and vegetables, gently tossing to combine. Cook for an additional 2-3 minutes to heat everything through and allow the flavors to meld.

              Serve: Remove from heat and garnish with chopped green onions and sesame seeds, if using. Serve the Sweet Chili Tofu Stir-Fry over cooked rice or noodles, if desired. Enjoy your meal!
