1 lb boneless, skinless chicken thighs, diced

1 tablespoon vegetable oil

1 red bell pepper, finely chopped

1 cup carrots, shredded

3 green onions, sliced

2 garlic cloves, minced

1/4 cup soy sauce

1/4 cup sweet chili sauce

1 tablespoon hoisin sauce

1 teaspoon sesame oil

1 teaspoon freshly grated ginger

Salt and pepper to taste

1 head of butter lettuce (or iceberg lettuce), leaves separated

Optional toppings: chopped cilantro, sesame seeds, lime wedges

Sauté the Chicken: In a large skillet, heat the vegetable oil over medium high heat. Add the diced chicken thighs and season with salt and pepper. Cook for about 7-8 minutes or until the chicken is golden brown and cooked through.

    Add Aromatics: Stir in the minced garlic and grated ginger. Cook for an additional 1-2 minutes until fragrant.

      Mix in Vegetables: Add the chopped red bell pepper and shredded carrots to the skillet. Sauté for about 3-4 minutes until the vegetables are tender but still crisp.

        Make the Sauce: In a small bowl, combine the soy sauce, sweet chili sauce, hoisin sauce, and sesame oil. Mix well.

          Combine Everything: Pour the sauce over the chicken and vegetable mixture. Stir well to ensure everything is evenly coated. Cook for another 2-3 minutes until the sauce is heated through.
