1 cup rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 cup buttermilk (or plant-based milk)

1/3 cup vegetable oil (or melted coconut oil)

1 large egg (or flax egg for vegan)

1 teaspoon vanilla extract

1 1/2 cups fresh blueberries (or frozen, if necessary)

Optional: Crumb topping (1/4 cup oats, 2 tablespoons flour, 2 tablespoons butter, 2 tablespoons brown sugar, mixed together)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners or lightly grease it.

    Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, all-purpose flour, brown sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk until evenly combined.

      Prepare Wet Ingredients: In another bowl, whisk together the buttermilk, vegetable oil, egg, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Avoid overmixing; a few lumps are perfectly fine.

          Fold in Blueberries: Carefully fold in the blueberries, ensuring they are evenly distributed without breaking them up too much.

            Fill the Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. If using, sprinkle the crumb topping over each muffin.

              Bake: Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.

                Cool: Remove the muffins from the oven and let them cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
