2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/2 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 tsp salt

1/4 cup chopped nuts (walnuts or almonds)

1/4 cup dark chocolate chips (optional)

1/4 cup dried fruits (cranberries, raisins, or apricots)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang to easily lift out the bars later.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.

      Add Dry Ingredients: In the same bowl, add rolled oats, ground cinnamon, and salt. Stir until everything is evenly coated.

        Incorporate Extras: Gently fold in the chopped nuts, dark chocolate chips (if using), and dried fruits until evenly distributed throughout the mixture.

          Spread into Pan: Pour the mixture into the prepared baking pan, using a spatula to spread it evenly and press it down firmly.

            Bake: Bake in the preheated oven for 20–25 minutes, or until the edges start to turn golden brown and a toothpick inserted in the center comes out clean.

              Cool and Cut: Once baked, remove from the oven and allow to cool completely in the pan. Once cool, use the parchment paper overhang to lift the bars out and place on a cutting board. Cut into squares or rectangles based on your preferred size.

                Store: Enjoy these bars immediately, or store them in an airtight container for up to a week, or freeze for longer storage.
