2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond butter (or your preferred nut butter)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup dark chocolate chips (optional)

1/4 cup chopped nuts (walnuts or pecans, optional)

1/4 cup dried fruit (raisins or cranberries, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (180°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Mix the Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and well combined.

      Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, cinnamon, and salt until evenly distributed.

        Combine Wet and Dry Mixes: Add the dry oat mixture to the wet banana mixture. Stir until all ingredients are combined. If you choose to add chocolate chips, nuts, and dried fruit, fold them in at this stage.

          Spread in the Pan: Pour the mixture into the prepared baking pan, spreading it out evenly. Press down firmly with a spatula or your hands to pack it tightly.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are golden and the center feels set to the touch.

              Cool and Cut: Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Use the parchment paper to lift the bars out of the pan and transfer to a cutting board. Allow to cool completely before cutting into squares or rectangles.

                Store: Store the breakfast bars in an airtight container in the refrigerator for up to a week, or freeze them for up to a month for longer storage.
