Ingredients

2 ripe bananas, mashed

2 cups rolled oats

2 cups almond milk (or any milk of choice)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup dark chocolate chips or dried fruit (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a muffin tin or line it with cupcake liners.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond milk, honey (or maple syrup), and vanilla extract. Whisk until well combined.

Combine Dry Ingredients: In another bowl, mix the rolled oats, baking powder, ground cinnamon, and salt.

Combine Both Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the chopped nuts and dark chocolate chips or dried fruit.

Fill Muffin Tin: Evenly divide the oatmeal mixture into the prepared muffin tin, filling each cup about 3/4 full.

Bake: Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Let the oatmeal cups cool in the tin for about 5 minutes, then carefully transfer them to a wire rack to cool completely. Enjoy warm or store in an airtight container for up to 5 days.
