1 teaspoon cinnamon

1/2 teaspoon nutmeg

1 teaspoon baking powder

1/4 teaspoon salt

2 ripe apples, peeled and finely diced (about 2 cups)

1/4 cup brown sugar (lightly packed)

1/4 cup honey or maple syrup

1/2 cup unsweetened applesauce

2 large eggs

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Cooking spray or parchment paper for greasing

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking pan or line it with parchment paper for easier removal.

    Prepare Dry Mixture: In a large mixing bowl, combine the rolled oats, cinnamon, nutmeg, baking powder, and salt. Mix well to ensure the spices are evenly distributed.

      Mix Wet Ingredients: In a separate bowl, whisk together the diced apples, brown sugar, honey (or maple syrup), applesauce, eggs, and vanilla extract until fully combined. If you’re using nuts or dried fruits, fold them into this mixture.

        Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir until everything is just combined—be careful not to overmix!
