Ingredients

For the Meatballs:

1 pound ground beef (or turkey for a lighter option)

1/2 cup breadcrumbs (fresh or panko)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 large egg

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

For the Glaze:

1/2 cup honey

1/4 cup soy sauce

1 tablespoon gochujang (Korean chili paste) or Sriracha

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon grated fresh ginger

Sesame seeds and chopped green onions for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the Meatballs:

      - In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, black pepper, and smoked paprika.

        - Mix until all ingredients are well incorporated. Avoid overmixing, as this can lead to tough meatballs.

          - Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.

Bake the Meatballs: Bake the meatballs in the preheated oven for about 20 minutes, or until they are cooked through and browned on the outside.

              Prepare the Glaze:

                - While the meatballs are baking, whisk together the honey, soy sauce, gochujang, rice vinegar, sesame oil, and grated ginger in a small saucepan.

                  - Heat the mixture over medium heat until it starts to bubble gently, then reduce the heat and let it simmer for about 5 minutes. Stir occasionally until the glaze thickens slightly.

                    Glaze the Meatballs:

                      - Once the meatballs are done baking, remove them from the oven and transfer them to a large bowl.

                        - Pour the glaze over the meatballs and gently toss to coat them evenly.

Serve: Transfer the glazed meatballs to a serving platter. Sprinkle with sesame seeds and chopped green onions for garnish. Enjoy them alone or over rice or noodles!
