1 medium green cabbage, shredded

1 large onion, thinly sliced

2 tablespoons olive oil

1 cup apple cider vinegar

1/2 cup brown sugar

1/2 cup water

1 tablespoon soy sauce

1 teaspoon mustard seeds

1/2 teaspoon black pepper

1 teaspoon salt

1/4 cup raisins or dried cranberries (optional)

Fresh parsley for garnish (optional)

Instructions
 

Sauté Onions: In a large skillet or pot, heat the olive oil over medium heat. Add the sliced onions and sauté until they are translucent and slightly golden, about 5-7 minutes.

    Add Cabbage: Stir in the shredded cabbage. Continue to sauté for another 5 minutes until the cabbage begins to wilt.

      Prepare Sauce: In a separate bowl, whisk together the apple cider vinegar, brown sugar, water, soy sauce, mustard seeds, black pepper, and salt until the sugar is dissolved.

        Combine: Pour the sauce over the cabbage and onions in the skillet. Stir well to ensure all the cabbage is coated with the sauce.

          Simmer: Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, stirring occasionally, until the cabbage is tender but still has a bit of crunch.

            Add Optional Raisins: If using, stir in the raisins or dried cranberries and cook for an additional 5 minutes until they are plump.
