2 ripe bananas, mashed

1/4 cup melted coconut oil (or unsalted butter)

1/2 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1 cup semi-sweet chocolate chips

1/2 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    In a large mixing bowl, combine the mashed bananas and melted coconut oil. Stir well until the mixture is smooth.

      Add the brown sugar and granulated sugar to the banana mixture, then mix until adequately combined.

        Beat in the eggs one at a time, and stir in the vanilla extract.

          In another bowl, whisk together the baking soda, baking powder, salt, flour, and cocoa powder.

            Gradually fold the dry ingredients into the wet ingredients until just combined; do not overmix.

              Gently fold in the chocolate chips and nuts (if using) until evenly distributed throughout the batter.

                Use a scoop or spoon to fill each muffin cup about 2/3 full with batter.

                  Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.

                    Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
