Sun-Dried Tomato & Spinach Ravioli Bake

1 package (9-12 oz) fresh or frozen cheese ravioli

1 cup sun-dried tomatoes, chopped (packed in oil, drained)

2 cups fresh baby spinach, roughly chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Ravioli: If using frozen ravioli, cook them according to package instructions until al dente. Drain and set aside.

      Make the Spinach and Sun-Dried Tomato Mixture: In a large mixing bowl, combine the chopped sun-dried tomatoes, chopped spinach, ricotta cheese, minced garlic, dried oregano, dried basil, red pepper flakes (if using), and half of the mozzarella and Parmesan cheeses. Season with salt and pepper to taste. Mix until all the ingredients are well combined.

        Layer Ingredients in Baking Dish: In a greased 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Layer half of the cooked ravioli over the sauce. Spoon half of the spinach and sun-dried tomato mixture on top of the ravioli, followed by another layer of marinara sauce.

          Repeat the Layers: Add the remaining ravioli, followed by the remaining spinach and sun-dried tomato mixture, and top with the remaining marinara sauce.

            Add Cheese Topping: Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
