Sun-Dried Tomato Pasta

12 oz (340g) spaghetti or your favorite pasta

1 cup sun-dried tomatoes, packed in oil, drained and chopped

3 cloves garlic, minced

1 small onion, finely chopped

1/2 cup heavy cream

1/2 cup freshly grated Parmesan cheese

1/4 cup fresh basil leaves, chopped

1/4 cup pine nuts, toasted

1/4 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish

Extra Parmesan for serving (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and set aside.

    Prepare the Sauce: In a large skillet over medium heat, add olive oil. Once hot, add chopped onions and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

      Incorporate Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and red pepper flakes. Cook for about 2-3 minutes, allowing the tomatoes to blend with the onion and garlic mixture.

        Make it Creamy: Pour in the heavy cream and mix well. Bring to a gentle simmer, then reduce the heat to low. Stir in the grated Parmesan cheese until melted and the mixture is smooth.

          Combine Pasta with Sauce: Add the cooked spaghetti to the skillet and toss to coat the pasta with the sauce. If the sauce is too thick, gradually add the reserved pasta cooking water until you reach your desired consistency.

            Season: Stir in the fresh basil and toasted pine nuts. Season with salt and black pepper to taste. Remove from heat.

              Serve: Plate the pasta, garnishing each dish with additional fresh basil leaves and extra Parmesan cheese, if desired.
