Summer Veggie Orzo with Feta & Fresh Herbs

1 cup orzo pasta

2 tablespoons olive oil

1 medium zucchini, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 cup cherry tomatoes, halved

1/2 cup corn kernels (fresh or frozen)

3 green onions, sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

1 tablespoon lemon juice

Salt and pepper to taste

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo and cook according to package directions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop cooking. Set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Once hot, add the zucchini, red bell pepper, and yellow bell pepper. Sauté for about 5-7 minutes, or until the vegetables are slightly tender.

      Add Cherry Tomatoes and Corn: Stir in the halved cherry tomatoes and corn kernels, cooking for an additional 3-4 minutes until the tomatoes start to soften. Season with salt and pepper to taste.

        Combine Ingredients: In a large mixing bowl, combine the cooked orzo with the sautéed veggies. Add the green onions, crumbled feta, fresh basil, parsley, and lemon juice. Toss everything gently to ensure the ingredients are well mixed.

          Final Seasoning: Adjust seasoning with additional salt and pepper if needed. For an extra splash of brightness, squeeze a bit more lemon juice over the top.
