2 medium yellow squash, sliced into half-moons

2 medium zucchini, sliced into half-moons

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh basil, chopped (or ½ teaspoon dried basil)

Salt and pepper to taste

Zest of 1 lemon

Juice of half a lemon

Grated Parmesan cheese (optional, for garnish)

Instructions
 

Prepare the Vegetables: Start by washing all the vegetables thoroughly. Slice the yellow squash and zucchini into half-moons and cut the cherry tomatoes in half. Thinly slice the red onion and mince the garlic.

    Heat the Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced red onion and sauté for about 3-4 minutes until it becomes translucent.

      Add Garlic and Squash: Stir in the minced garlic and sauté for another 30 seconds until fragrant. Next, add the yellow squash and zucchini to the skillet. Season with salt, pepper, and thyme. Cook for about 5-7 minutes, stirring occasionally, until the squash is tender yet slightly crisp.

        Incorporate the Cherry Tomatoes: Add the halved cherry tomatoes to the skillet and sauté for an additional 2-3 minutes, just until they begin to soften.

          Finish with Herbs and Lemon: Remove the skillet from heat. Stir in the chopped basil, lemon zest, and lemon juice. Adjust seasoning with additional salt and pepper if desired.
