Summer Shrimp & Pineapple Rice Bowls

1 lb large shrimp, peeled and deveined

2 cups cooked jasmine rice

1 cup pineapple chunks (fresh or canned)

1 red bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 teaspoon lime zest

2 tablespoons lime juice

1 avocado, sliced

1/4 cup fresh cilantro, chopped

Salt and pepper, to taste

Lime wedges, for serving

Instructions
 

Marinate the Shrimp: In a bowl, combine the shrimp, soy sauce, sesame oil, lime zest, lime juice, minced garlic, and grated ginger. Toss until the shrimp are well coated. Cover and let marinate in the refrigerator for about 15-20 minutes.

    Cook the Shrimp: Heat a non-stick skillet or grill pan over medium-high heat. Add the marinated shrimp in a single layer and cook for about 2-3 minutes on each side, until the shrimp are pink and opaque. Remove from heat and set aside.

      Sauté the Vegetables: In the same skillet, add a little more sesame oil if needed. Sauté the diced red bell pepper and red onion over medium heat for about 4-5 minutes until they are softened but still crisp. Season with salt and pepper to taste.

        Combine with Pineapple: Add the pineapple chunks to the skillet with the peppers and onions. Stir gently and cook for an additional 2 minutes until the pineapple is heated through.

          Assemble the Bowls: In bowls, spoon a generous portion of jasmine rice as the base. Layer on the sautéed shrimp, pineapple, and vegetables. Top each bowl with avocado slices and chopped cilantro.
