4 ears of fresh corn, husked

2 cups cherry tomatoes, halved (mix of red and yellow for color)

1 medium red onion, finely diced

1 cup cucumber, diced (preferably English or hothouse)

1/4 cup fresh basil leaves, chopped

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon honey (or agave syrup for vegan option)

Salt and pepper to taste

Cook the Corn: Bring a large pot of water to a boil. Add the husked corn and boil for about 3-5 minutes until tender. Remove the corn, let it cool, and use a sharp knife to cut the kernels off the cob.

    Prepare the Vegetables: In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, and finely diced red onion.
