Stuffed Mini Bell Peppers with Turkey

12 mini bell peppers (various colors)

1 pound ground turkey

1 cup cooked quinoa (or rice)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

½ teaspoon salt

¼ teaspoon black pepper

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

2 tablespoons olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the mini bell peppers and remove the seeds and membranes. Set aside.

      Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onions are translucent, about 3-4 minutes.

        Add Turkey and Spices: Add the ground turkey to the skillet, breaking it up with a spatula. Cook for about 5-7 minutes until browned. Stir in the cumin, smoked paprika, chili powder, salt, and pepper.

          Combine Filling Ingredients: In a large mixing bowl, combine the cooked quinoa, black beans, corn, and half of the shredded cheese with the cooked turkey mixture. Mix well until all ingredients are incorporated.

            Stuff the Peppers: Carefully spoon the turkey mixture into each mini bell pepper, pressing down gently to pack the filling.

              Bake the Peppers: Arrange the stuffed peppers upright in a baking dish. Sprinkle the remaining cheese on top of the stuffed peppers. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Remove the stuffed peppers from the oven, let cool slightly, and garnish with fresh chopped cilantro. Serve warm as an appetizer or a main dish.
