Stuffed Chicken Breast

4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1/2 cup sun-dried tomatoes, chopped (in oil preferred)

1 cup mozzarella cheese, shredded

1/4 cup cream cheese, softened

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and black pepper, to taste

2 tablespoons olive oil

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a mixing bowl, combine the chopped spinach, sun-dried tomatoes, mozzarella cheese, cream cheese, minced garlic, oregano, basil, salt, and black pepper. Mix until well combined.

      Prepare the Chicken: Using a sharp knife, carefully cut a pocket into each chicken breast. Be sure not to cut all the way through.

        Stuff the Chicken: Spoon the spinach and sun-dried tomato filling into each chicken pocket. Use toothpicks to secure the openings if necessary.

          Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the stuffed chicken breasts and sear for about 3-4 minutes on each side until they are golden brown.

            Bake the Chicken: Once seared, transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

              Rest and Serve: Remove the skillet from the oven and let the chicken rest for 5 minutes. Remove toothpicks if used. Garnish with fresh basil leaves before slicing and serving.
