Stuffed Cabbage Rolls

Ingredients
  

1 large head of green cabbage

1 lb ground beef (or turkey)

1 cup cooked rice (white or brown)

1 small onion, finely chopped

2 cloves garlic, minced

1 large carrot, grated

1 tsp dried thyme

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1 can (15 oz) tomato sauce

1 can (14.5 oz) diced tomatoes, undrained

2 tbsp olive oil

2 tbsp fresh parsley, chopped (optional for garnish)

Instructions
 

Prepare the Cabbage: Bring a large pot of salted water to a boil. Carefully peel off about 12-15 leaves from the cabbage. Add the leaves to the boiling water and cook for about 2-3 minutes until tender. Remove and place them in cold water to stop the cooking process. Pat dry and set aside.

    Make the Filling: In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until softened, about 3-4 minutes. Add grated carrot and cook for an additional 2 minutes.

      Combine Ingredients: In a large bowl, combine the ground beef, cooked rice, sautéed vegetables, thyme, paprika, salt, and black pepper. Mix until well combined.

        Stuff the Rolls: Take a cabbage leaf and place about 2-3 tablespoons of the filling at the base of the leaf. Fold the sides over the filling and roll it tightly from the base towards the top. Repeat with remaining leaves and filling.

          Prepare the Sauce: In a mixing bowl, combine the tomato sauce and diced tomatoes. Spread a thin layer of the sauce on the bottom of a large baking dish.

            Arrange the Rolls: Place the stuffed cabbage rolls seam side down in the baking dish. Pour the remaining sauce over the rolls, ensuring they are well covered.

              Bake: Preheat your oven to 350°F (175°C). Cover the baking dish with aluminum foil and bake for 45-50 minutes. For an extra touch, remove the foil during the last 10 minutes of baking to allow the tops to become slightly browned.
