Stuffed Bell Peppers with Rice and Turkey

4 large bell peppers (any color)

1 pound ground turkey

1 cup cooked rice (white or brown)

1 small onion, finely chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded mozzarella cheese

1/2 cup fresh parsley, chopped (for garnish)

1 tablespoon olive oil

Instructions
 

Preheat the oven: Start by preheating your oven to 375°F (190°C).

    Prepare the bell peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and place them upright in a baking dish.

      Cook the turkey mixture: In a large skillet over medium heat, add the olive oil and sauté the chopped onion until it becomes translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

        Add the ground turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Cook, stirring frequently until the turkey is browned and cooked through, about 6-8 minutes. Drain any excess fat.

          Combine ingredients: Lower the heat to medium and stir in the cooked rice, drained diced tomatoes, Italian seasoning, smoked paprika, salt, and pepper. Mix well and cook for another 2-3 minutes to allow the flavors to meld.

            Stuff the peppers: Remove the skillet from the heat, and carefully spoon the turkey and rice mixture into each prepared bell pepper. Pack it tightly and ensure they are filled to the top.

              Top with cheese: Sprinkle the shredded mozzarella cheese generously on top of each stuffed pepper.

                Bake the peppers: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                  Garnish and serve: Once cooked, remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with fresh parsley before serving.
