2 ripe avocados

1 can (5 oz) tuna in water, drained

1/4 cup Greek yogurt (or mayonnaise)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/4 cup cherry tomatoes, diced

1/4 cup cucumber, finely chopped

2 tablespoons red onion, finely chopped

1 tablespoon fresh cilantro, chopped (optional)

Salt and pepper to taste

Prepare the Avocados: Cut the avocados in half, remove the pit, and scoop out a little bit of the flesh to create a larger space for the filling. Set the scooped avocado flesh aside in a mixing bowl.

    Make the Tuna Filling: In the bowl with the scooped avocado, add the drained tuna, Greek yogurt (or mayonnaise), Dijon mustard, and lemon juice. Mix well to combine. This mixture should be creamy yet chunky.
