Strawberry Lemonade Popsicles

2 cups fresh strawberries, hulled and chopped

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1/2 cup granulated sugar (adjust based on sweetness preference)

1 cup water

Zest of 1 lemon

1/2 cup sparkling water (optional, for fizz)

Instructions
 

Prepare Strawberries: In a blender, add the chopped strawberries and blend until smooth. If you prefer a chunkier texture, pulse a few times to leave some small pieces.

    Make Lemonade Base: In a medium saucepan over medium heat, combine the sugar and 1 cup of water. Stir until the sugar is dissolved completely. Remove from heat and let it cool slightly.

      Combine Ingredients: In a large bowl, mix the strawberry puree, freshly squeezed lemon juice, lemon zest, and the cooled sugar water until well combined.

        Add Sparkling Water: If you want some fizz in your popsicles, gently fold in the sparkling water.

          Fill the Molds: Pour the mixture evenly into popsicle molds, leaving a little space at the top for expansion as they freeze. If desired, you can add sliced strawberries to each mold for a decorative touch.

            Insert Sticks: If your molds have lids, place them on now. If not, insert wooden sticks into each mold.

              Freeze: Place the molds in the freezer for at least 4-6 hours, or until completely frozen.

                Unmold: To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds or gently tug on the sticks.
