Strawberry Glazed Turkey

1 whole turkey (10-12 pounds), thawed

1 cup fresh strawberries, hulled and sliced

1/2 cup strawberry jam

1/4 cup balsamic vinegar

1/4 cup honey

2 tablespoons olive oil

1 tablespoon Dijon mustard

4 cloves garlic, minced

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

Salt and pepper, to taste

1/2 cup chicken broth (for basting)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (165°C).

    Prepare the Turkey: Rinse the turkey inside and out under cold water, then pat it dry with paper towels. Season the cavity and skin generously with salt and pepper.

      Make the Strawberry Glaze: In a medium saucepan, combine the sliced strawberries, strawberry jam, balsamic vinegar, honey, olive oil, Dijon mustard, minced garlic, thyme, and rosemary. Bring the mixture to a simmer over medium heat. Cook for about 5-7 minutes until the strawberries break down slightly. Remove from heat and set aside.

        Roasting Preparation: Place the turkey breast-side up on a roasting rack in a large roasting pan. Pour the chicken broth into the bottom of the pan to keep the turkey moist during cooking.

          Apply the Glaze: Brush the strawberry glaze generously over the turkey, ensuring it coats every part of the skin. Reserve about 1/4 of the glaze for basting later.

            Roast the Turkey: Roast the turkey in the preheated oven. Baste with the reserved glaze and pan juices every 30 minutes. Cooking time will vary but plan for about 13-15 minutes per pound. A 10-pound turkey should take approximately 2 to 2.5 hours.

              Check Doneness: Insert a meat thermometer into the thickest part of the thigh without touching bone. The turkey is done when the internal temperature reaches 165°F (74°C).

                Rest the Turkey: Once done, remove the turkey from the oven and let it rest for at least 30 minutes before carving. This allows the juices to redistribute, making for a moist turkey.

                  Serve: Slice the turkey and serve it drizzled with remaining strawberry glaze. Optionally, garnish with fresh strawberries or herbs for a beautiful presentation.
