Strawberry Cream Cheese Muffins

1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

1 large egg

½ cup milk

⅓ cup vegetable oil

1 teaspoon vanilla extract

1 cup fresh strawberries, diced

4 oz cream cheese, softened

2 tablespoons powdered sugar

Zest of 1 lemon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

    Prepare the Cream Cheese Filling: In a small mixing bowl, combine the softened cream cheese, powdered sugar, and lemon zest (if using). Mix until smooth and set aside.

      Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking soda, baking powder, and salt until well combined.

        Combine Wet Ingredients: In another bowl, whisk the egg, milk, vegetable oil, and vanilla extract until fully combined.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix—some lumps are okay.
