1 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon brown sugar

1 cup buttermilk (or regular milk with 1 tablespoon vinegar)

1 large egg

1 tablespoon melted butter

1 ripe banana, mashed

For the Sticky Toffee Sauce:

1/2 cup packed brown sugar

1/4 cup unsalted butter

1/4 cup heavy cream

1 teaspoon vanilla extract

A pinch of sea salt

For Serving:

Additional sliced bananas

Whipped cream (optional)

Chopped nuts (optional)

Instructions
 

Prepare the Sticky Toffee Sauce:

    - In a small saucepan over medium heat, combine the brown sugar and butter. Stir until melted and combined, about 2 minutes.

      - Slowly pour in the heavy cream, whisking constantly until the mixture is smooth and begins to bubble.

        - Remove from heat and stir in the vanilla extract and a pinch of sea salt. Set aside.

          Make the Pancake Batter:

            - In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and brown sugar.

              - In another bowl, mix the buttermilk, egg, melted butter, and mashed banana until smooth.

                - Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

                  Cook the Pancakes:

                    - Preheat a non-stick skillet or griddle over medium heat. If needed, lightly grease with butter or oil.

                      - Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.

                        - Flip the pancakes and cook for another 2-3 minutes, until golden brown and cooked through.

                          - Repeat with the remaining batter, adjusting the heat as necessary.
