Ingredients

For the Meatballs:

1 lb ground chicken or turkey

1/2 cup panko breadcrumbs

1/4 cup finely chopped green onions

2 cloves garlic, minced

1 tbsp minced ginger

1 tbsp soy sauce

1 tbsp sesame oil

1 egg

1 tsp salt

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional for heat)

For the Sticky Sauce:

1/3 cup soy sauce

1/4 cup honey or maple syrup

2 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1 tbsp minced ginger

1 tbsp cornstarch mixed with 2 tbsp water (for thickening)

Sesame seeds and chopped green onions for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Make the Meatball Mixture: In a large bowl, combine the ground chicken (or turkey), panko breadcrumbs, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, egg, salt, black pepper, and red pepper flakes. Mix until fully incorporated, but do not overwork the mixture.

Form the Meatballs: Using your hands, form the mixture into 1-inch meatballs and place them on the prepared baking sheet, spacing them about 1 inch apart.

Bake the Meatballs: Bake the meatballs in the preheated oven for about 20 minutes, or until they are golden brown and cooked through (an internal temperature of 165°F or 74°C).

Prepare the Sticky Sauce: While the meatballs are baking, prepare the sauce. In a small saucepan over medium heat, combine the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and minced ginger. Bring it to a simmer.

Thicken the Sauce: Stir in the cornstarch-water mixture and cook for an additional 1-2 minutes, stirring constantly until the sauce thickens to your desired consistency. Remove from heat.

Glaze the Meatballs: Once the meatballs are done baking, transfer them to a large bowl. Pour the sticky sauce over the meatballs and gently toss to coat them thoroughly.

Garnish and Serve: Sprinkle sesame seeds and additional chopped green onions over the coated meatballs before serving. Enjoy them warm, or allow them to cool for meal prep!
