Sticky Sesame Cauliflower Bites

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour for GF option)

1 cup water

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup panko breadcrumbs (or gluten-free panko)

1 tablespoon sesame oil (for frying)

For the Sticky Sauce:

1/4 cup soy sauce (or tamari for gluten-free option)

1/4 cup honey (or maple syrup for vegan option)

2 tablespoons rice vinegar

2 tablespoons sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water

1 teaspoon ginger, minced

2 cloves garlic, minced

1 tablespoon sesame seeds

2 green onions, sliced (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Prepare the batter: In a large bowl, whisk together the flour, water, garlic powder, onion powder, salt, and black pepper until smooth.

      Coat the cauliflower: Dip each cauliflower floret into the batter, allowing any excess to drip off. Then, roll them in panko breadcrumbs to coat thoroughly.

        Bake the cauliflower: Arrange the coated cauliflower on the prepared baking sheet. Drizzle or spray lightly with sesame oil. Bake in the preheated oven for about 25-30 minutes or until golden brown and crispy, flipping halfway through.

          Make the sticky sauce: In a small saucepan, combine the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced ginger, and minced garlic. Bring to a simmer over medium heat, stirring continuously. Once boiling, add the cornstarch mixture and cook for an additional 1-2 minutes until the sauce thickens. Remove from heat and add the sesame seeds.

            Coat the baked cauliflower: Once the cauliflower bites are done baking, transfer them to a large bowl and pour the sticky sauce over them. Toss gently to coat all the bites evenly.
