Ingredients

8 chicken drumsticks

1/2 cup pure maple syrup

1/4 cup Dijon mustard

3 cloves garlic, minced

2 tablespoons soy sauce (low sodium recommended)

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 teaspoon dried thyme

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top for the chicken to rest; this ensures it cooks evenly.

Prepare the Marinade: In a medium-sized bowl, whisk together the maple syrup, Dijon mustard, minced garlic, soy sauce, apple cider vinegar, smoked paprika, black pepper, salt, and dried thyme. Mix until all ingredients are well combined.

Marinate the Chicken: Place the chicken drumsticks in a large resealable plastic bag or a deep dish. Pour the marinade over the chicken, ensuring every piece is well-coated. Seal the bag (or cover the dish) and refrigerate for at least 30 minutes, or up to overnight for maximum flavor.

Arrange Drumsticks: After marinating, remove the chicken from the refrigerator. Shake off excess marinade and arrange the drumsticks on the wire rack placed over the baking sheet. Reserve the leftover marinade.

Bake the Chicken: Bake the drumsticks in the preheated oven for 25 minutes. While they are baking, pour the reserved marinade into a small saucepan and bring it to a boil. Reduce heat and let it simmer for 5 minutes, stirring occasionally, to thicken slightly.

Glaze the Chicken: After 25 minutes, remove the drumsticks from the oven and brush them generously with the thickened marinade. Return them to the oven and bake for an additional 10-15 minutes, or until the internal temperature reaches 165°F (74°C) and the outside is caramelized.

Serve: Once cooked, let the drumsticks rest for about 5 minutes. Garnish with freshly chopped parsley if desired, and serve with your favorite sides, like coleslaw or roasted vegetables. Enjoy the sweet and tangy flavors!
